An Introduction to Malt Production and Malt Mixing

Abstract
Production of malt is a complicated technological method including soaking, sprouting and drying of sprouted malt in controlled conditions of temperature and moisture. Constant development in developing countries like Iran is related to agriculture as a main part of job creation. Triticale has practical benefits such as, short soaking period, high diastatic power, quick malt making and high extraction capacity. However it has several problems including high soluble nitrogen and viscosity. In comparison with provided malt from wheat, barley and rye, prepared malt from Triticale has the most affection on bread volume with low amount of sugar.
