Analysis of the main development trends of restaurant business of Ukraine

Abstract

In this article an analysis of the main development trends in the restaurant business of Ukraine is carried out. The main indicators characterizing the specifics of the restaurant business development on different sources of information are analyzed, in particular: volume of sales, number of enterprises and institutions of restaurant business. The structure of restaurant business institutions is provided. Major factors of influence on modern development of restaurant business are revealed. Such factors as: price, margin, demand, import substitution, necessary investments are researched. The most effective directions of functioning of restaurant business institutions are determined, among them: focus on a market mid-price segment, activity with servicing by drinks, production of craft-products and refusal of import goods.
