Abstract
The technology of storing Jerusalem artichoke in earth clays is substantiated and recommended. Before storing for storage, the tubers are thoroughly mixed with moist sand at a ratio of 1: 1 and covered with a 15 -20 cm thick soil layer. As a result of aboveground storage of tubers at a temperature above 10 ° C, their drying is observed, which is related to water loss, polysaccharides and mycosis, bacteriosis
