INTEGRATED SYSTEM OF MANAGEMENT BY QUALITY AND SAFETY OF FOODSTUFFS

Abstract

The basic tendency of development of global economy now is intensification and rationalization of norms of manufacture carried out in conditions of minimization of ecological pressure. Such type activity has to be supplemented by guaranteeing of safety of produced production for life and health of consumers and also the personnel employed in its manufacturing. So, the most promising mode of administration by activities of the enterprise in such conditions is realization in it of the so-called “integrated” system of management based on use of norms of respective international standards, what would permit to help in recognition of its proper qualification. The basic criteria of such system is guaranteeing of good quality and unconditional safety of produced products, minimal negative influence on the state of environment and safe conditions of work of personnel engaged on their manufacturing. Taking into consideration the similarity of structures of documents to be used in development of integrated quality systems, there was proposed to take norms of international standard ISO 9001 as the base of the system and complement its clauses by norms of standards of ISO 14001, ISO 22000 and OHSAS 18001. This work was carried out in use of the meat-processing enterprise as the model, and its results permitted us to propose the basic structure of the system of work, which may be recommended as the model in development of the system of operation in producing of any food, and show the advantages to be obtained in realization of the integrated system of management.
