METABOLOMIC ANALYSIS AND THE APPLICATIONS FOR PROFILING AND CHARACTERIZATION OF TEA (CAMELLIA SINENSIS L.)

Abstract
Metabolomic analysis is a study to determine as much as possible the metabolite in a system, in this case the tea plant. In general, metabolomic analysis is classified into targeted analysis and untargeted analysis. Metabolomic analysis processes are sample preparation, metabolite extraction, derivatization, metabolite separation, detection, and data processing. The application of metabolomic analysis was performed using a method for the determination of metabolic profile of pu-erh tea with UPLC-QTOF-MS that was associated with multivariate statistical analysis. On the other hand, this application could be used to determine the quality/grade of tea especially green tea in evaluating the sensory character of the smell of volatile substances in tea using GCMS. The focus of this review is metabolomic analysis can be applied to the characterization of Pu-erh tea and to know the volatile substance profile in green tea.
