USE THE BASIL OF DRIED BUNS TECHNOLOGY FOR HAM-BURGERS

Abstract

The article substantiates the expediency of using spicy aromatic raw materials in the technology of buns for hamburgers, namely the dried basil. The results of studies on the influence of raw materials on the technological process of production of rolls for hamburgers are presented. With the help of laboratory studies, the efficiency of the use of this raw material in the production of bakery products has been proved.
