Abstract

For a few decades, among producers, traders and processors of agricultural products, sunflower varieties containing more than 82 % of oleic acid have been becoming in popular demand. The growing popularity of high-oleic hybrids requires an increase in acreage for their cultivation. This promotes cross-pollination of hybrid and non-hybrid sunflower varieties. Therefore, the fatty acid composition of sunflower oil depends not only on the plant variety, but also on the region where it is grown. The problem of the operative quantitative determination of fatty acid composition of the oil for the purpose of its optimal use is acute. The express and non-destructive method of NMR 1H spectroscopy based on the comparison of integrated intensities of different hydrogen signals of triacylglyceroles can be considered as a convenient alternative to chemical methods for determining fatty-acid composition of sunflower oil.
