Dodatki do żywności w świetle polskich i unijnych unormowań prawnych

Abstract
Bezpieczeństwo żywności związane jest ze stosowaniem w niej substancji dodatkowych. Omówiono rodzaje żywności bogate w takie substancje. Przedstawiono podział substancji dodatkowych ze względu na funkcje technologiczne oraz sposoby ich oznaczania na etykiecie. Przeanalizowano aktualne unormowania prawne obowiązujące w Polsce i w Unii Europejskiej dotyczące stosowania dodatków do żywności. Wykazano korzyści i zagrożenia wynikające z nadmiernego stosowania takich substancji w żywności.
